Chilli Con Carne Seasoning
It is always best to make up a big batch of Chilli Con Carne Seasoning in advance and store in an
air tight container in a dark dry cupboard. Leave it for a week before using it as this allows the
spices to mingle and blend which produces a more mature result. The following proportions are relative
so use teaspoons or cups depending on how much you think you will use. It keeps at its best for about 6
months but after that will begin to lose aroma and potency.
Toast the Cumin and Coriander seeds in a dry heavy pan until they crackle and pop. Remove to a bowl and allow to cool.
Grind the Cumin, Coriander, Pepper, salt and Oregano in a spice grinder until you have as fine a powder as your grinder can achieve.
Mix the ingredients together and store in an air tight packet or jar in a cool dark place for a week before using.
